Best carbon steel knife under $100

So out of the box it had an ok edge wich lasted longer than most of my more expinsive knives, once i put an razor sharp edge on it it lasted longer than expected prossesing 80lbs of chicken, 40lbs of pork, and planty of vegitables before wanting to hono the edge again, and even still cut paper lake any of the shelf knife would, hands down one of my new fav knife brands!

This knife is a laser flys through food. Incredibly clean look. So sharp it makes every knife in your block seem dull. Simple and clean.

This knife is a work of art definitely a laser. Flys through food and that stamped pattern pushes foodlike potato away from the blade.

Great Value

Tokushu had this handle on special, I couldn't pass on the price. It's well crafted, maybe not the finest ebony specimen - some variations in color - but a big upgrade over the rough chestnut oval I had on my JCK Blue Moon sujihiki. I think the knife looks great now and I like the feel of the octagonal handle. I e-mailed Tokushu regarding the length of the handle and they gave recommendation for the 240mm suji that was right on.

I spent a little time with needle files to get the tang fitment I wanted, but I expected as much. Overall, very satisfied.

Great strop - Strop Shots Make it Shine!

This strop looks nice, and does its job. I like how it fits in my stone holder, and I can use it at the final stage of my sharpening process. The 2 micron Strop Shots Tokushu sells are incredible. In about 3 passes on each side you have a new edge. Excellent!

This is probably the most beautiful knife I own. It’s stunning. I like its performance especially in slicing. Highly recommend and knife from Nakagawa. Will be searching for more of his knives in the future.

Fantastic knife and fantastic-er customer service

I think this is a Goldilocks kind of knife. It's not too expensive and not too cheap. It's not too gaudy and not too banal. It's not too hard to sharpen and not made from too soft of steel. The only complaint I have is this is my first 135 mm petty and I don't think it's quite for me. Even though it's only slightly smaller than a 150 or 180 mm petty it feels a lot less versatile to me. I bought this as a citrus knife that can sit on the board or the bar, but it's too short to easily get through a medium size orange. This life is also a little bit too big for me to use as an in-hand knife other than for cleaning up meat. I prefer a 80 mm knife for in hand pairing type of work and I wish I got a 180 mm as my citrus/bar knife.

Shout out to the gentleman running the shop. They were so fast to take care of me and went above and beyond. I'll definitely keep coming back to support them.

This thing greatly benefited from Zach’s sharpening. It’s so sharp and Tokushu did such an incredible job both respecting this gorgeous knife and also protecting the Mirror Migaki finish.
The thing is so sharp. Wonderful job. I will forever add this to any future order.

Stunning and Functional

I did not think something could look this good and be perfectly functional. Despite the classy polish, the handle feels nice and isn’t slippery. It looks great with my knife and is a pleasure to use.

A handle that is a creation

Just a piece they created to fit the knife. A buffalo horn shaped into a knife handle. Polished in such a way that you think the handle is made of black marble with white decorations. Amazing.

Single handily the best knife for the price I’ve ever bought

So I’ve need needing a new chef knife but I’m always trying to budget stuff.

Honestly I gotta say I’m extremely impressed.
This Kiritsuke is bad ass.
I did a forced patina after about 3 weeks with instant coffee and got extremely close to the look and protection I wanted.
The blade is great retains an edge and it’s super light weight which is weird at first but is a blessing.
It’s also worth noting that the edge angle is super fine and might take you a try or two to get that perfect angle again. I wound up bringing it up to about 20 ish for the bevel and then dropping it back down to the 8 or 12 mark.
As I said the blade is thin, you need to listen to the instructions that come with the knife. Obviously with a thinner blade you get extremely precise cuts but don’t go for bone etc etc.
Honeing wise for an average of my 12-14 hour days where I spend a total of 3 hours cook time and the remained food preping I’d hone maybe 4 times total depending on what I’m cutting.
I’m not supported by them but if any of y’all need a new knife for home or work it’s worth it.
I can’t even cover a 30 min bar tab with 65…
Or a Taco Bell order but anyway!

Cutting board scraper

The cutting board scraper is very useful which is more hygienic than others chemical products. Definitely recommend product.

Cuts As Good As It Looks!

I have been wanting one if these for a long time, and could no longer resist. The grind is excellent, and it really thins out near the tip. Food release is excellent considering its a high polish. This is something that can stand up to commercial use with the SLD core. I have no regrets!

Love this knife

Bought for my wife. Stains easily but if your someone that enjoys patina and using your knives then this is a joy to use. Very balance. Not too light and not heavy. It is beautiful in detail. My 1-2 is the Bunka and Petty knife majority of the time.

Game Changer

After getting this knife with a finished edge by Zach Peters,,,,it is now my knife to measure not only the level of sharpness, but also the standard of performance. The best way to describe it is "silk"... when cutting anything from a ripe tomato to a carrot, it is nice and smooth. The blade sinks into whatever I am cutting. Denifetly worth the purchase,,,if you like the knives you use now, do not get this knife because it will set the bar for a new standard and you will have to buy more Hatsukokoro knives. Happy Chopping
